Bounty pastel

The prickly pear cactus bears this luscious fruit each spring. Called a “cactus fig” or “tuna”, the delicacy makes you pay dearly for the culinary reward. Carefully harvesting the fruit with thorns trying to stab you, peeling it without getting little needles into your hands, cooking and mashing: quite a process! Joni’s grandmother made prickly pear jelly sought after by all the neighbors. Slighty sweet, gorgeous pink color. Bounty indeed!
